All employees working in food organisations, Health and Social Care and professions involving food handling must ensure that their food hygiene practises follow The Food Safety Act 1990 (as amended) to ensure that they operate at minimum risk for their customers.

 

Course Outline
This course teaches learners the fundamental principles in food safety practices.

*Food legislation.

 

* The importance of food hygiene and safety.

 

* Contamination – what causes food contamination and how to prevent contamination occurring through good food safety measures; this includes safe  temperature and storage procedures.

 

* Personal Hygiene.

 

* Safe temperature and storage measures.

 

* Control food safety risks using  Hazard Analysis and Critical Control Point management systems. (HACCP)

 

* Maintaining hygienic premises and equipment.
